Banana muffins and pine nuts prepared with almond drink
Mis magdalenas son bajas en azúcar y contienen menos calorías. Estas preparadas con grasas saludables y sin lácteos. Tenía unos plátanos que estaban madurando, así que ha sido una buena excusa para utilizarlos en este dulce. Todos sabemos que es mejor comer poca azúcar, pero reconozco que hay que acostumbrarse poco a poco a tomar menos. Como la sal, el azúcar intensifica el sabor de tus platos, por eso, si uno se acostumbra a añadir mucha sal o mucha azúcar cuando se come algo que tiene menos parece que no sabe a nada. No olvides que es recomendable ir disminuyendo el consumo de la sal y del azúcar.
My muffins are low in sugar and contain fewer calories. These muffins are prepared with healthy fats and dairy free. I had some bananas that were ripening, so it was a good excuse to use them in this sweet. We know all that is better to eat less sugar, but I recognize that I am trying to eat less little by little. Like salt, sugar intensifies the flavor on your dishes, for that reason, if you get used to eat with too much salt or too much sugar, when you eat some food with less it seems to not taste anything. Do not forget it is healthier reducing the use of salt and sugar.

Ingredientes:
(For 12 muffins)
- 190 gr de harina
10 gr de levadura
1 pizca de bicarbonato
80 gr de azúcar de caña (poco dulce)
1 plátano
1 cuch. té de vainilla
1 cuch. postre de cúrcuma
3 huevos
8 cuch. soperas de bebida de almendras
4 cuch. soperas de aceite de oliva
Un poco más de azúcar para decorar
Unos piñones

Ingredients:
(For 12 muffins)
- 190 gr of flour
10 g of baking powder
1 pinch of baking soda
80 grams of sugar cane (slightly sweet)
1 banana
1 tea spoon vanilla
1 dessert spoon turmeric
3 eggs
8 Tbsp. drink almond
4 Tbsp. olive oil
Some more sugar cane to garnish
Some pine nuts
Directions:
- Preheat the oven to 180ºC.
- Peel the banana and cut 12 thin slices, the rest cut into cubes.
- Beat the eggs with the almond drink, olive oil and sugar.
- In a bowl, mix the flour, the baking powder, the baking soda, the vanilla powder and turmeric.
- Gradually add the flour mixture to the egg mixture and go slowly beating until the dough is smooth and without lumps. Then add the chopped banana and mix with the dough carefully.
- Fill the molds to just over half (about three tablespoons per mold). Place a slice of banana and some pine nuts on top. Add a pinch of sugar cane and bake for 30 minutes.
