Mucha gente tira el tronco del brócoli porque sólo aprovechan los ramitos; lo cierto es que yo también lo hacía. Sin embargo el tronco del brócoli tiene el mismo sabor, fibra vegetal y otras propiedades nutricionales del resto de la planta. Mezclándolo con otras hortalizas o verduras se puede obtener una sopa vegetariana sabrosa, digestiva, rica en vitaminas y minerales. Deja libre tu imaginación y aprovecha las verduras.

La receta

Ingredientes: (Para dos personas)

    El tronco de un brócoli y las ramitas más duros
    1 cebolla grande
    125 gr de apio-nabo limpio o patatas peladas
    1 cubo de caldo concentrado vegetal bio
    1 cucharada de aceite de oliva virgen extra
    1 cucharada de tapioca
    Sal
    Agua

The recipe

Ingredients: (For two persons)

    The stem of a broccoli and twigs harder
    1 large onion
    125 g celery-rave clean or peeled potatoes
    1 vegetable bouillon cube bio
    1 tablespoon extra virgin olive oil
    1 tablespoon tapioca
    Salt
    Water
     

Directions:

  1. In a saucepan, saute onion slightly shredded. It is better does not take color. Add the trunk of broccoli, celeriac diced, stir cook for five minutes covered on medium heat.
  2. Cover with water and when it starts to boil, add the vegetable stock and simmer covered for 20 minutes.
  3. Add a scoop of tapioca and simmer 10 more minutes, stirring often. Grind in a blender and add salt if necessary.
  4. Serve with some sprouts or fried bread croutons.
