La receta

Ingredientes: (Para dos personas)

    1 trozo de calabaza de unos 500gr
    1 cebolla
    1 cucharadita de cúrcuma
    Jengibre fresco
    1 pizca de sal
    Aceite de oliva virgen extra
    Perejíl o cilantro

The recipe

Ingredients: (For three persons)

    1 piece of pumpkin about 500g
    1 onion
    1 teaspoon of turmeric
    Fresh ginger grated
    1 pinch of salt
    Extra virgin olive oil
    Parsley or cilantro

Directions:

  1. Peel and cut the onion into strips and softly fry in a pan with a little virgin olive oil.
  2. Before the onion begins to brown, add the pumpkin into pieces without the skin and a little of grated ginger. Cover and cook for about ten minutes over low heat. Then cover with water, add a pinch of turmeric and salt, simmer another 20 minutes more.
  3. Serve the soup with finely chopped parsley or cilantro and a few tablespoons of coconut milk thickens slightly.
