Las semillas de soja son como judías si se cuecen. Esta ensalada está hecha con brotes de soja y soja cocida, mezcladas con otros ingredientes típicos de una ensalada. El resultado es un plato refrescante y nutritivo que puede servir como entrada o aperitivo. Si no tienes semillas de soja puedes utilizar judías cocidas.
En una ensalada los ingredientes son muy importantes, escoge tomates maduros firmes que tengan sabor. Las olivas negras prefiere las que venden a granel bien maduras que las que van en bote de conserva sin hueso que no suelen saber a nada.

Soybeans are as beans when they are cooked. This salad is made with soy bean sprouts and cooked soy beans, mixed with other ingredients typical of a salad. The result is a refreshing and nutritious dish that can be served as a starter or appetizer. If you cannot have soya you could change by cooked beans.
In a salad the quality of the ingredients are very important; choose firm ripe tomatoes that have flavor. For the black olives prefer those sold in bulk ripe that a can of olives without bone that often taste anything.




(Para dos personas)

    Media taza de semillas de soja
    Un tomate
    Un trozo de pepino
    Un puñado de brotes de soja
    Medio pimiento rojo asado
    8 olivas negras
    Aceite de oliva virgen extra
    Zumo de medio limón
    Sal y azúcar

(For two persons)

    Half cup of soybeans
    A tomato
    A piece of cucumber
    A handful of bean sprouts
    Half red pepper roasted
    8 black olives
    Extra virgin olive oil
    Juice of half a lemon
    Salt and sugar


  1. Soak the soybeans yesterday. The next day, in the morning, cook them in boiling water with a pinch of salt for one hour. Drain and let cool.
  2. Wash bean sprouts, bring water to a boil and when it starts boiling pour the bean sprouts and remove them immediately, just a second and out. Cool immediately in cold water, drain and set aside.
  3. Prepare the salad dicing tomatoes (remove seeds). Peel and cut a piece of cucumber into small dices, cut in small pieces the red pepper. Put everything in a deep dish, add a splash of extra virgin olive oil and some salt. Add the cooked soy bean and the sprouts.
  4. Dissolve some sugar in the lemon juice and sprinkle the salad.
  5. Finely chop the aromatic herbs and add to the salad and toss to mix all the flavors.
  6. In the last minute add the chopped pitted olives.
